Fall dinner idea! A twist on Chicken noodle soup!

  1. Hello sweets! Bre here again to give you one of my Fall/autumn friendly dinner idea’s: chicken noodle soup with a spicy kick. Delicious!  

  1. As you know you know, I am a single mommy of six growing minions, I am on a baddie budget, so every meal I create aligns to fit my lifestyle. My meals are quick, inexpensive, and delicious. I make ideas based on my vibes and my budget, but I can always find the perfect ideas to satisfy my kids needs and mommy’s wallet. With this dish I got inspo from the feelings of the changing season. The season shifts from the summer heat to cozy fall weather. Now, everyone is different but, fall for me has a dual feeling, it always feels homy, cozy and the time to start the ending of year. During this time, I like to try new ideas from old favorites and make wholesome meals for the family. The season also brings along cool weather and makes dishes such as this one perfect, because the soup fills you with warmth, while the noodles give the comfort food feel.  

Ingredients  

  1. Okay, so all the items for this dish were from different stores, because I'm just that gurl, and I will shop at 5 different stores, including delivery services, to get the highest quality of the cheapest things. Yes friend. Basically, whatever store has the least expensive pricing, that’s where I get my items. Now, the pricing may be different for everyone depending on location, and brand of the item but I always stay with the least expensive items for my area. Also, I feed six children so I generally buy my meat in bulk, which sometimes can result in much lower pricing per pound. With that I bought some ingredients for this meal, and I had the other ingredients on hand. Here’s what I used and what it cost me: 

  1. 1-pound Skinless chicken breast: 3.06 $ (I had 2 pounds for 6.13 and I used half) 

  1. 16 oz Extra wide Egg noodles  

  1. 2 cans of green beans (fresh is better): 1.10$ 

  1. 2 cans of diced tomatoes and chiles (1 spicy can and 1 mild) each can was .60 cents so 1.20 total 

  1. ½ cup of diced sweet onion. I use fresh already diced onion.1.30  

  1. A packet of Lipton noodle soup 1.60 

  1. 1 box of chicken stock 1.45$ 

  1. Seasonings: I used what I had on hand (salt, pepper, onion powder garlic powder etc.) 

Prepping: 5 minuets 

  1. This dish does not have that much prep needed and it only took me about 5 minutes. That’s another reason I love this dish, because as a busy parent, full time student and eCommerce boutique owner, the quicker the better in this case.  

  1. For starters I prep the chicken breast. I take one pound of boneless, skinless chicken breast and filet through the middle and then slice each one into bite size cubes, for this dish I sliced 3 chicken breast. I toss the chicken in a bowl with the seasoning. I added salt pepper and other spices. I coat all the chicken breast and set aside. I drain the can of green beans, mild tomatoes and chiles and keep the entire can of spicy tomatoes. I prep a Dutch oven, or large pot, with a tablespoon of olive oil. That’s all the prep needed, then I move on to cooking. 

Cooking: about 35 minutes 

  1. I can remember cooking alongside my dad since I was younger and how those experiences first started my love for cooking and learning new recipes, even if that changing an old favorite to fit my vibes, and now that I'm a mom I love to supply these types of dishes that my children and I can enjoy and bond over.  

  1.  After the oil in the pot becomes hot, I toss in the onion and cook it down a bit. Once translucent, I remove the onion and set aside, I toss in the seasoned chicken and cook down for about 6 mins. Once the chicken starts to cook some, crank the heat to high and add 1 box of chicken stock about 2 ½ cups and ½ cup of water. 

  1. At this point, dump in the 2 cans of tomatoes and chiles, the cooked onion and bring to a boil. Once the soup was boiling, I added the packet of Lipton chicken noodle soup mix and the wide egg noodles. Stirring occasionally, I cooked the noodles for about 8 minutes. After the noodles have cooked some, I lower the heat to simmer, and add in the 2 cans of green beans, and just for extra, fresh diced tomatoes. I stir, add a lid and simmer for about 10-15 minutes. 

  1.  Since I have little ones, I allowed the soup to cool for about 10 minutes. After, I served this warm Fall dish in bowls alongside a slice of French baguette, which I buy from Walmart for 1 buck, can't beat that.  

 

 

 

Ingredients  

  1. 1-pound Skinless chicken breast

  1. ½ cup of diced sweet onion.  

  1. A packet of Lipton noodle soup mix 

  1. 1 box of chicken or vegetable stock  

  1. Seasonings: I used what I had on hand (salt, pepper, onion powder garlic powder etc.) 

  1.  

Steps 

  1. Rinse chicken with cold water  

  1. Patt dry a little  

  1. Slice in half  

  1. Cut into bite size cubes  

  1. Season chicken  

  1. Cut one onion in half and dice half of the onion 

  1. Take a Dutch oven and add about a table spoon of olive oil  

  1. Cook down the ½ cup of diced sweet onion (or whatever onion you choose) 

  1. Remove onion and toss in chicken  

  1. Cook the chicken for about 6 mins  

  1. Crank the heat to high add in the 2 ½ cups of stock  

  1. Stir in the onion and the 2 cans of tomatoes and chiles.

  1. Bring to a boil  

  1. Add in the Lipton mix and wide egg noodles  

  1. Boil for about 8 minutes  

  1. Lower heat to simmer  

  1. Add in the green beans and fresh tomatoes  

  1. Serve with bread or biscuits. 

  1. Enjoy! 

 


I do plan out my meals for the week so all the remaining ingredients I have will surely be a part of next week's dinners.
